Did you eat your Top Tier on your first Wedding Anniversary? We did! And not only our first anniversary but every anniversary since. {plus that one time when I was pregnant with Cash, shhhhhh….}   This month we celebrated our 5th wedding anniversary with yet another piece of our wedding cake top tier. It still tasted as amazing as it did five years ago! {6 thaws later}

I suppose you could call me a hardcore romantic. I’ll take it as a compliment. Wedding Cake is one of those traditions that I do absolutely love and believe it holds more meaning in the marriage than most. Read my Project Block 13 Post about the traditions behind Wedding Cake to see my sentiments. So I make sure that my husband and I celebrate each passing year with a reminder of why we’re here and how we’re still surviving together, just like this cake. That every year I accept the challenge to lean over the world and kiss him. {Read the P13 post and you’ll understand} 😉

How to Freeze the Top Tier of your Wedding Cake

What’s my secret? How on earth am I keeping a frozen cake around that long and ensuring that it survives multiple years of freezing and thawing? How is it possible that it still tastes the exact same as it did 5 years ago? I’ll tell you….

What you need

  1. Cardboard Box
  2. Snapware
  3. Ziploc Freezer Bag
  4. Cellophane
  5. Wax Paper
  6. Tape

Step 1 | Wax Paper

Most people think you cake just throw something into the freezer and it will survive. That, unfortunately, is very incorrect. Like all things in a freezer, freezer-burn is your biggest obstacle. The more exposed to the air something is the more potential for the burn.  This brings me to the first and crucial step which is wax paper. Wax paper is a little bit sticky so it clings to your Wedding Cake reducing the air touching it. Wrap your piece of cake as tight as you can, like it’s a gift. I then use tape to make sure all of my folds stay in place.

Our wedding cake was decorated to look like tree bark, so that’s what you see on the wax paper here. Still amazingly preserved!

Step 2 | Cellophane

The next step in defense against air exposure. I prefer to use Glad Wrap because it has the best stick in my opinion. I wrap up the wax paper wrapped cake as if it is a gift also, as tight as possible.

Step 3 | Freezer Bag

Carefully place your twice wrapped cake into a Ziploc Freezer bag and gently press it closed while squeezing out as much air as possible. This now ensures three defensive layers against freezer burn.

Step 4 | Snapware

Every time you open your freezer air get in there and is then trapped when you close the door. That trapped air had moisture in it. Since that air has nowhere to go, the moisture eventually freezer and lands where ever it can cling to. Even though your wedding cake is wrapped 3 times, you still want to put it into an air tight container. I put mine in a Snapware. Situate your cake into your Airtight Snapware and seal it.

Step 5 | Cardboard Box

Whichever the size of Snapware you’re using, I try to make my box about the same size so that as the box is moved around of the years it doesn’t shake around. Also, the less air circulating the better. Our wedding cake even survived our move to Salem 2 years ago! Seal your box up with packaging tape, label it “Wedding Cake” and make sure to write on it “Do Not Discard” so that nobody accidentally throws it away.

Stick that precious wrapped parcel into your freezer and wait a year, then another, then another 😉
